Katz wrote the book on fermentation (namely, Wild Fermentation and the brand-spankin' new The Art of Fermentation), but you can also glean a lot from his website, which includes a searchable FAQ and fermentation support forums. He also wins the prize for maybe the best food book title in The Revolution Will Not Be Microwaved (though Duguid & Alford's Seductions of Rice is tough to beat).
